Shane is out this week so Ryan and I brought in a bit of a ringer with Sissy.  She’s a self proclaimed beer snob so she fit right in with the two of us.

This week, we checked out a little number by Ale Asylum called Bedlam.  Bedlam is a Belgian IPA, as a matter of fact, according to their website, it’s the fifth highest rated Belgian IPA in the world.  And after having some, I can see why.  This is just a flat out really good beer.  There’s plenty of hop flavor and aroma right up front, but that quickly fades away in the after taste.  There’s plenty of complexity here as well with all of us getting a little something different out of it.  Ryan was getting some apple and mango flavors, while Sissy was tasting some citrus.  I got all of those with an underlying sweetness that was a bit bready.  Bottom line, this IPA knocked our socks off.

My Rating:  8.0

Sissy’s Rating:  8.75

So yeah, this was solid and highly recomended.

Since Shane wasn’t here to help with the food pairing, Ryan had a great idea:  Pair Bedlam up with Rosati’s Chicago Style Hot Dog.  With the weather getting nicer out there, have some dogs delivered from Rosati’s, grab a six or two of Bedlam and you’re set for the afternoon.
