I have to say, you guys love your bacon, and so do we. Last week, Ryan and I gave you bacon as your starting point and we got some really good ideas. Everything from a bacon filled Oreo, to bacon popcorn, to a maple bacon martini. But the one that really intrigued us was the bacon cheesecake idea from Eric. I like me some cheesecake. And I like me some bacon. And I hadn’t thought of putting those two hands together, but we did, and you know what? It worked. I even attempted to make candied bacon for the first time to use for garnish. It took a few tries, but I think even that ended up pretty tasty. So if you want a little something unique, give a bacon cheesecake a shot.

By the way, for those of you curious, all I did was buy a premade graham cracker crust. The filling was a typical no bake cheesecake: Two 8 Ounce cream cheese, 1 cup sugar, 1 teaspoon vanilla. I cooked four or five slices of bacon, crumbled them really well. (I actually put them in a little bullet blender and pulped them.) Then I mixed the bacon in with the cream cheese, sugar, and vanilla. Then just fold in two cups of Cool Whip, fill the crust, throw it in the fridge. Done.
